Liberty Goes Beyond Brews & Booze

We at #GourManila have been rooting for Liberty Kitchen + Brew since it opened almost a year ago. It may be located at CityWalk or the drinking spot of Eastwood City, but it managed to impress our palate without the cliché offerings of its neighboring pubs. It was not surprising at all, given that Liberty was conceptualized and built by the same team behind Lola Café. Now nearing its first year in the neighborhood, Liberty just came out with new Asian rice bowls to draw more attention (and customers) to what it does best.

Liempo Bagoong Rice / Beef Soy Rice

It looks like Chef Jonvin used all his freedom to sprinkle a dash of uniqueness to well-known classics and come up with unlikely flavor combinations. Let’s start with the Liempo Bagoong Rice bowl that takes sweet-and-savory pairing to a whole new level of deliciousness, thanks to the steamed French beans, salsa, and chicken skin that added more flavor and texture to an already tasty meal. The Beef Soy Rice bowl, on the other hand, is an easy and comforting meal. It looks rather plain with beef sukiyaki, garlic rice and buttered corn, but it wins with its overall taste that could rival our local version of tapsilog—if only it had egg, that is.

Curry Bacon Katsu / Seafood Aligue Rice

The Seafood Aligue Rice took the place of our favorite squid dish on the menu. We found its combination of aligue rice, grilled squid, and salted egg a bit dry in texture, but we can imagine it winning our palate again with an extra serving of soft-boiled egg that may just soften its tough feel to the tongue. We didn’t have this reservation with the Curry Bacon Katsu, which tastes as good as it looks. Deep-fried to golden, crisp perfection, and reaches flavor peak when paired with the sweet-and-spicy Asian slaw.

Chicken & Egg Rice / Beef Arroz Caldo

Another standout on the new menu is the Beef Arroz Caldo. It has beef heart, liver, and brisket that all make for a deep meaty flavor missing from ordinary, MSG-laced arroz caldos. It also does not cause “umay” even without a dash of lemon. The Chicken and Egg Rice and Honey Pork Kimchi Rice are also worth a try too, if your goal is just to fill up on carbs and protein after a drinking session or a hard day’s work.

Priced below Php 250, these Liberty rice bowls provide equal parts fulfillment and excitement. Each serving is big enough to satisfy even a famished diner. Plus, the flavor twists aren’t merely gimmicks because they really add taste and value to the experience. All these make Liberty Kitchen + Brew an accessible source of joy for curious appetites like ours–and yours.
